Marinade Eel Salad

Ingredients:
- marinated eel grams 300
- curly endive grams 200
- pomegranate seeds grams 30
- pine nuts grams 30
- a spring onion
- lemon
- extra virgin olive oil
- salt
Instructions:
- Wash, clean and drain the curly endive well. then form a bed on the serving plate with it. Also clean the spring onion and reduce-
- Cut them about half in thin wedges.
- Cut the well-coed marinated eel in touches and place them on the bed of endive, alternating the fish with the slices of spring onion, then sprinkle everything with the pine nuts and pomegranate seeds.
- Season the salad with a prepared citronnette by emulsifying 3 tablespoons of oil with 2 of lemon juice, a pinch of salt and the rest of the finely chopped onions.
- Bring it to the table right away.
Recommended wine: dry, fragrant white wine
