Ingredients:

  • 4 sea bass fillets with skin 600 g in all
  • 4 spring onions
  • star anise
  • butter
  • sale
  • pepper in grains


Preparations

  1. Salt, pepper and sprinkle the sea bass fillets with 2 berries of crushed star anise. Place 2 fillets in a plate with the skin facing down, cover them with the other 2, pulp against pulp, and let them marinate for about 2 hours.
  2. Melt in a frying pan 20 g of butter, cook the sea bass fillets marinated and cleaned of the spices for 5-7 minutes, then remove them and place them on the serving plate, keeping them warm.
  3. Add to the cooking bottom the sliced spring onions (julienne), a pinch of salt, the remaining crushed star anise, an abundant ground pepper and let them cook for about 3 minutes. Transfer everything to the plate with the sea bass and bring to the table immediately.
