Cod Crocchette

Service: 4 persons
Instructions:
- 2 medium potatoes
- 300 grams of 2 cod fillet
- a spoonful of seeds of poppy
- 3 eggs
- 6 slices of sandwich bread
- a clove of garlic
- chives
- extra virgin olive oil abundant oil for fry
- salt pepper
Preparations:
- Wash and boil the potatoes, peel them and pass them through a potato masher while they are still hot, collecting the purée in a bowl.
- Cut the cod fillet into chunks and brown them in a non-stick pan with the garlic clove and a drizzle of extra virgin olive oil.
- Remove the garlic clove 2 and mince the fish, crushing it with the back of a wooden spoon.
- Add the cod to the mashed potatoes, salt and pepper, add an egg and the chopped chives and mix vigorously to mix well.
- Remove the crust from the bread slices and pass them to the mixer, then mix in the poppy seeds.
- Form small quantities of the mixture into balls the size of large walnuts, dip them first in the remaining beaten eggs, then in the poppy seed bread.
- Fry the croquettes, a few at a time, 4 in plenty of hot oil, until they are golden brown. Drain them with a slotted spoon and arrange them, little by little, on a sheet of absorbent kitchen paper to remove the excess grease.
- Lightly salt the croquettes and serve piping hot.
