Beef Steak with Stir Fried Chanterelle


Difficulty: Easy
Cooking time: 15 minutes
Servings: 2 persons

Ingredients:
  • 2 swiss beef covered rib steaks of approx. 3cm thick
  • 2 knob butter
  • salt
  • ground pepper

Instructions:
  1. Take the covered rib steaks out of the fridge 1 hour before you prepare them.
  2.  If you are using a meat thermometer, you can stick it in the center of the meat. If you like your steak rare, set the thermometer to a core temperature of 55°C.
  3. Put the butter into a frying pan and heat over high heat. When the butter turns liquid, it's hot enough to put your steaks in.
  4. Sear your steaks on each side for about 1 minute.
  5. Never prick the meat with your fork to turn it, it will lose its juice unnecessarily. Then reduce the heat to medium and cook your steaks 3 to 4 minutes more, turning them occasionally.
  6. Place your middle finger on your thumb and press down on the area under your thumb. If your steaks show the same resistance, they are perfectly rare. If you used a thermometer, remove the meat from the pan when it has reached 55°C.
  7. Salt, pepper and serve immediately. Serve with stir fry chanterelle mushrooms and echalote.
