Sautéed Pork Colombo

 Sautéed Pork Colombo 



Preparation time: 15 minutes

Cooking time: 1 hour 30 minutes 

Difficulty: very easy 

Serving 6 persons


Ingredients: 

  • 500 grams pork chunks
  • 3 medium aubergins
  • 1 medium onion
  • 2 tablespoon colombo powder
  • 1 chicken stock cube
  • Salt
  • Pepper
  • 1 teaspoon flour



Procedure:

  1. Sauté the onion in olive oil. Once they are softenput  the pork and brown.
  2. Then add colombo powder and flour on all the meat brown everything,  and mix well.
  3. Mix again and then add the chicken broth so that the meat is completely covered.
  4. Simmer over low heat for 1½ hours. While simmering, clean and dice the aubergins.
  5. 30 minutes before the end of the cooking add the diced aubergines.
  6. Serve with rice.
