Sautéed Pork Colombo
Preparation time: 15 minutes
Cooking time: 1 hour 30 minutes
Difficulty: very easy
Serving 6 persons
Ingredients:
- 500 grams pork chunks
- 3 medium aubergins
- 1 medium onion
- 2 tablespoon colombo powder
- 1 chicken stock cube
- Salt
- Pepper
- 1 teaspoon flour
Procedure:
- Sauté the onion in olive oil. Once they are softenput the pork and brown.
- Then add colombo powder and flour on all the meat brown everything, and mix well.
- Mix again and then add the chicken broth so that the meat is completely covered.
- Simmer over low heat for 1½ hours. While simmering, clean and dice the aubergins.
- 30 minutes before the end of the cooking add the diced aubergines.
- Serve with rice.
