Basbousa is a traditional Middle Eastern semolina cake, known for its rich, moist texture and sweet flavor. This delightful dessert is made from semolina, yogurt, and shredded coconut, and is baked to golden perfection before being soaked in a fragrant sugar syrup. Often adorned with blanched almonds and infused with rose or orange blossom water, Basbousa offers a taste of Middle Eastern hospitality and culinary tradition. Simple yet exquisite, it's a perfect treat for any occasion.


To prepare the Basbousa, you will need the following utensils:

Mixing bowls: One large bowl for the cake batter and another for preparing the syrup.

  1. Measuring cups and spoons: For accurately measuring the ingredients.
  2. Whisk or spatula: For mixing the batter.
  3. Saucepan: For preparing the sugar syrup.
  4. 9x13 inch baking dish: For baking the cake.
  5. Knife: For scoring the batter before baking.
  6. Brush (optional): For greasing the baking dish.
  7. Toothpick or cake tester: For checking if the cake is done.
  8. Cooling rack: For allowing the cake to cool after baking.

Ingredients:

For the Cake:

  • 1 1/2 cups semolina
  • 1 cup shredded coconut
  • 1 cup sugar
  • 1 cup plain yogurt
  • 1/2 cup melted butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Blanched almonds (for decoration)


For the Syrup:

  • 1 1/2 cups sugar
  • 1 cup water
  • 1 tsp lemon juice
  • 1 tsp rose water or orange blossom water (optional)


Instructions:

Preparing the Syrup:

  1. In a saucepan, combine sugar and water. Bring to a boil over medium heat.
  2. Once it starts boiling, add lemon juice and reduce the heat. Let it simmer for about 10 minutes.
  3. Remove from heat and stir in rose water or orange blossom water, if using. Let the syrup cool completely.


Preparing the Cake:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or oil.
  2. In a large bowl, mix together semolina, shredded coconut, sugar, yogurt, melted butter, baking powder, and vanilla extract until well combined.
  3. Pour the batter into the prepared baking dish and spread it evenly.
  4. Use a knife to score the top of the batter into diamond or square shapes.
  5. Place a blanched almond in the center of each diamond or square.
  6. Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.


Final Touch:

  1. Once the cake is done, remove it from the oven and immediately pour the cooled syrup evenly over the hot cake.
  2. Allow the cake to absorb the syrup and cool completely before cutting along the scored lines and serving.
