Pasta Carbonara
with Bacon
Pasta Carbonara is a classic Italian pasta dish that traditionally features pasta, eggs, Pecorino Romano cheese, guanciale (cured pork jow), and black pepper. While guanciale is the traditional choice for Pasta Carbonara, bacon is often used as a readily available and delicious alternative in many parts of the world.
Here's how to make Pasta Carbonara with bacon:
Ingredients:
- 12 ounces (340 grams) of spaghetti or another pasta of your choice
- 1 cup grated Pecorino Romano cheese (or Parmesan as a substitute)
- 3 large eggs
- 4-6 slices of bacon, cut into small pieces
- Freshly ground black pepper
- Salt to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Start by cooking the pasta in a large pot of salted boiling water until it's al dente, following the package instructions. Before draining, save about 1/2 cup of the pasta cooking water.
- While the pasta is cooking, cook the bacon pieces in a skillet over medium heat until they become crispy. Remove them from the skillet and drain on paper towels.
- In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Season the mixture with a generous amount of freshly ground black pepper.
- Once the pasta is cooked, drain it and immediately transfer it to the skillet with the bacon.
- Toss the pasta with the bacon pieces, allowing the heat to coat the pasta with the bacon's flavorful fat.
- Remove the skillet from the heat, and while the pasta is still hot, quickly pour the egg and cheese mixture over the pasta. Toss the pasta and the egg mixture together vigorously. If the mixture appears too thick, add a bit of the reserved pasta cooking water to create a creamy sauce.
- Continue to toss until the pasta is coated with the creamy, cheesy sauce and the eggs have thickened but not scrambled.
- Taste and adjust the seasoning with salt if necessary.
- Serve the Pasta Carbonara immediately, garnished with extra grated Pecorino Romano cheese, a sprinkle of black pepper, and chopped fresh parsley if desired.
Pasta Carbonara with bacon is a rich and indulgent dish, and it's loved for its creamy texture and the smoky flavor of the bacon. It's a comfort food classic.
