9 lasagna noodles
1 (10-ounce) package frozen chopped spinach, thawed and drained
8 ounces goat cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste
2 cups marinara sauce
Fresh basil leaves for garnish (optional)
Instructions:
Preheat your oven to 350°F (175°C). Cook the lasagna noodles according to the package instructions until they are al dente. Drain, rinse with cold water, and set aside.
In a mixing bowl, combine the thawed and drained chopped spinach, goat cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, dried basil, dried oregano, garlic powder, salt, and pepper. Mix until well combined. This will be your creamy spinach and goat cheese filling.
Spread a thin layer of marinara sauce in the bottom of a 9x13-inch baking dish.
Place three cooked lasagna noodles on top of the sauce in the baking dish.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
