Ingredients
- 1 cup dried green or brown lentils, rinsed and drained
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adiust to taste for spice level
- Salt and black pepper to taste
- Fresh cilantro leaves for garnish
- Cooked rice or naan bread for serving
Instructions
- Rinse the lentils thoroughly and set them aside. Heat the vegetable oil in a large deep skillet or saucepan over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
- Add the minced garlic and grated ginger to the onions. Cook for another 1-2 minutes until fragrant.
- Stir in the curry powder, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper. Cook for a minute or 2 to toast the spices.
- Add the diced tomatoes (with their juices) to the pan and stir well. Let it simmer for about 5 minutes until the tomatoes break down.
- Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.
- Add the rinsed lentils and chickpeas to the pan. Stir everything together.
- Cover the pan and let the curry simmer for about 20-25 minutes, or until the lentils are tender. Stir occasionally, and if the mixture becomes too thick, you can add a little water little water.
- Season the curry with salt and pepper to taste.
- Serve the Lentil and Chickpea Curry over cooked rice or with naan bread. Garnish with fresh cilantro leaves if desired.
