Ingredients:

For the cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons bakir powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of one lemon
  • 1/2 cup buttermilk
  • 1/2 cup fig jam


For the Topping

  • 1/2 cup chopped walnuts
  • 2 tablespoons brown sugar
  • Zest of one lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside.
  3. In a separate large towl, cream together the softened butter and sugar until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Start and finish with the dry ingredients. Mix until just combined.
  6. Pour half of the cake batter into the prepared cake pan.
  7. Spoon the fig jam on top of the batter and gently swirl it into the batter using a knife or a spatula.
  8. Add the remaining cake batter on top.
  9. In a small bowl, mix together the chopped walnuts, brown sugar, and lemon zest. Sprinkle this mixture evenly over the top of the cake batter.
  10. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.
  12. Once cooled, you can optionally drizzle a simple lemon glaze over the cake for extra flavor.

To make the glaze, mix 1 cup of powdered sugar with 2-3 tablespoons of fresh lemon juice.
