& Lemon Cake

Ingredients:
For the cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons bakir powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of one lemon
- 1/2 cup buttermilk
- 1/2 cup fig jam
For the Topping
- 1/2 cup chopped walnuts
- 2 tablespoons brown sugar
- Zest of one lemon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside.
- In a separate large towl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Start and finish with the dry ingredients. Mix until just combined.
- Pour half of the cake batter into the prepared cake pan.
- Spoon the fig jam on top of the batter and gently swirl it into the batter using a knife or a spatula.
- Add the remaining cake batter on top.
- In a small bowl, mix together the chopped walnuts, brown sugar, and lemon zest. Sprinkle this mixture evenly over the top of the cake batter.
- Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and place it on a wire rack to cool completely.
- Once cooled, you can optionally drizzle a simple lemon glaze over the cake for extra flavor.
