WITH CHEESE 

& OLIVES


Easy chicken escalopes with ham baked in the oven, crunchy and oozing with cheese, delicious and less fussy to make. It is filled with cheese and olives baked in the oven, and served with potato wedges and salad. A perfect meal for us! But this is a healthier easier version, made with chicken breasts filled with ham and cheese, coated breadcrumbs, and baked instead of fried.

Servings for 4 persons

Preparation time: 20 minutes 

Cooking time; 15 to 20 minutes

Ingredients:

  • fairly thick free-range chicken breasts
  • 200 g of fresh goat's cheese
  • 2 handfuls of pitted green olives (100 g)
  • A few sprigs of tarragon
  • 4 slices of raw ham
  • 1 pinch of Espelette pepper
  • 3 tbsp. olive oil


Preparation:

  1. Preheat the oven to 200°C.
  2. Cut the chicken breasts in the thickness to form a pocket.
  3. Crush the olives, mix them with goat cheese. Chop the tarragon and add it to the mixture with the Espelette pepper.
  4. Stuff the chicken breasts with the goat cheese mixture.
  5. Place each raw breast on a slice of ham and roll it around the chicken.
  6. Oil a baking dish.
  7. Arrange the stuffed chicken breasts and bake for 15 to 20 minutes.
  8. Enjoy with a green salad.
