Chicken Fritters

Ingredients:
- 300g roast chicken (the leftover Sunday chicken), chopped
- 1 C. finely chopped onion
- 1 C. finely minced garlic
- 4 tbsp. chopped flat-leaf parsley
- 150 g of flour
- 1 West Indian pepper
- ½ tsp. baking soda
- Juice of ¼ lime
- Salt pepper
Preparations:
- In a salad bowl, add the minces chicken
- chopped onion, garlic and parsley. Add salt and pepper.
- In another bowl, mix the flour and 12.5 cl of water (using the well method).
- Crush the chilli in 5 cl of water, remove it, add the baking soda and lemon juice to this chilli water.
- Add the ground chicken to the batter, then mix.
- Pour teaspoons of the preparation into the oil preheated to 180°C to form golden donuts.
- Drain them on absorbent paper before enjoying them very hot, as an aperitif.
