CHICKEN FRITTERS

 Chicken Fritters


Servings for 4 people

Cooking time 20 minutes 


Ingredients:

  • 300g roast chicken (the leftover Sunday chicken), chopped
  • 1 C. finely chopped onion
  • 1 C. finely minced garlic
  • 4 tbsp. chopped flat-leaf parsley
  • 150 g of flour
  • 1 West Indian pepper
  • ½ tsp. baking soda
  • Juice of ¼ lime
  • Salt pepper


Preparations:

  1. In a salad bowl, add the minces chicken
  2. chopped onion, garlic and parsley. Add salt and pepper.
  3. In another bowl, mix the flour and 12.5 cl of water (using the well method).
  4. Crush the chilli in 5 cl of water, remove it, add the baking soda and lemon juice to this chilli water.
  5. Add the ground chicken to the batter, then mix.
  6. Pour teaspoons of the preparation into the oil preheated to 180°C to form golden donuts.
  7. Drain them on absorbent paper before enjoying them very hot, as an aperitif.
