Thai Chicken Wings

Yield: SERVES 2-3 for dinner
INGREDIENTS
- 1 lb chicken wings, whole or separated into
- 'drumlets' and 'tips
- 8 Tbsp. cornstarch
- 4 tsp. salt
- 1+1/2 Tbsp. sugar
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1 tsp. paprika
- 1 tsp. ground coriander
- 1/2 tsp. whole cumin seeds
- 1/4 to 1 tsp. cayenne, to taste
- 1/4 tsp. freshly-ground black pepper
DIP:
- 2 Tbsp. sweet chili sauce
- 2 Tbsp. mayonnaise OR 2-4 Tbsp. sour cream
GARNISH (optional): handful fresh coriander
PREPARATION
- Rinse chicken wings under cold water and set aside to drain. Prepare baking sheet by covering it with parchment paper or tin foil for easy clean-up.
- Preheat oven to 350 degrees.
- In a medium-size bowl, combine the cornstarch, salt, sugar, garlic powder, onion powder, paprika, ground coriander, whole cumin seeds, cayenne, and freshly-ground black pepper. Stir well to combine.
- Now dredge the wings, one at a time, in the dry spice and cornstarch mixture, making sure to coat all sides. Lay wings neatly on prepared baking sheet. Set in oven to bake 30 minutes.
- Remove wings and use tongs to gently flip over.
- Return to oven for another 30 minutes, or until wings are browned and crisped to your liking.
- While wings are cooking, prepare dipping sauce by stirring together sweet chilli sauce and mayonnaise or sour cream. Transfer to small bowls for serving.
- Serve wings hot from the oven together with the dipping sauce. ENJOY
