Salted Cake with Bell Peppers and Cheese

 SALTED CAKE WITH 

BELL PEPPERS AND CHEESE


Servings: For 6 people 

Preparation time: 30 minutes 

Cooking time: 1 hour


Ingredients: 

  • 1 red pepper 
  • 1 green pepper 
  • 3 eggs 
  • 10 cl of milk 
  • 50 g of pecorino cheese 
  • Butter (for the mould) 
  • 200 g of flour (+ for the mould) 
  • 1 sachet of baking powder 
  • 10 cl of olive oil 
  • 1 tbsp. fennel seeds (or cumin) 
  • 1 tbsp. fine salt 
  • ½ tsp. ground pepper



Preparations:

  1. Preheat the oven on the grill position. 
  2. Place the peppers in the oven, skin side up, and cook until the skin is completely black. Take them out of the oven and let them cool by enclosing them in a plastic bag. 
  3. Set the oven to 210°C. Pour the flour and yeast into a bowl. Add the oil, milk, salt and pepper in a well dug in the center. Mix. 
  4. Incorporate the eggs one by one, mixing well between each. 
  5. Peel the peppers, seed them and cut them into strips. 
  6. Coarsely chop the pecorino or grate it.
  7. Add them to the dough., Mix them gently. 
  8. Butter and flour a cake tin. Pour the batter into it and gently tap the bottom of the pan on the work surface to remove any air bubbles. 
  9. Sprinkle for 40 minutes.
  10. Bake. Check the cooking by sticking the blade of a knife into the cake, it should come out dry. Take it out of the oven, let it cool down, then turn it out onto a wire rack. 
  11. Let it cool completely, then cut it into thick slices.
