 Peaches with macaroons

Ingredients:

  • 4 yellow peaches
  • 60 g macaroons
  • cocoa powder
  • sugar
  • Peach juice


Preparations:

  1. Wash the peaches, then cut them in half, remove the stones and with the help of a spoon dig them in the center to extract a little pulp. Put it in a bowl, mash it well with a fork and add the coarsely crumbled amaretti biscuits, a spoonful of cocoa, 2 spoonfuls of sugar and a few spoonfuls of peach juice.
  2. Mix everything well to amalgamate the ingredients and fill the cavities of the fruit with this mixture. Arrange the 8 peach halves in a baking dish in which you have poured a little water that just covers the bottom: it will serve to keep the fruits soft.
  3. Put the peaches in the oven at 180°C for about 20 minutes. Take the baking dish out of the oven, let it cool down, then serve the peaches with amaretti biscuits on the table
