 MUFFINS WITH 

RED FRUITS

Servings: For 6 people

Ingredients:

  • 150 g of red fruits (blackberries, raspberries, etc.) 
  • 2 eggs 
  • 100 g of softened butter 
  • 150 grams T55 flour 
  • 120 g caster sugar 
  • 1 sachet of Vanilla sugar 
  • ½ sachet of yeast 
  • 1 pinch of salt


Preparation:

  1. Rinse the berries and dry them. Crack the eggs, separating the whites from the yolks. Whip the egg whites until stiff with the pinch of salt. 
  2. Whip the butter in a bowl with the powdered sugar and vanilla sugar.
  3. Add the egg yolks one by one, then the flour and baking powder sifted together. Mix until you obtain a homogeneous preparation. Gently fold in the egg whites. in small cake pans. Smash the fruit
  4. Preheat the oven to 180°C. Spread the dough red inside. Bake for 20 to 25 minutes.
