Cantonese Rice

 CANTONESE RICE



Servings: For 4 people

Preparation time: 20 minutes

Cooking time 35 minutes 

Resting 10 minutes


Ingredients:

  • 100g smoked bacon
  • 150g peas (frozen)
  • 4 spring onions (or 2 spring onions)
  • 1 onion
  • 4 sprigs of cilantro
  • 2 eggs
  • 350g basmati rice
  • Turmeric Oil
  • Salt and pepper

Preparations:

  1. Cook the rice in 1.5 times its volume of salted water, with a pinch of turmeric. When the water boils, lower the heat and cook until the liquid is completely absorbed. Cover and let simmer for 10 minutes. 
  2. Strip the cilantro then chop it. Chop the onion and the chives. 
  3. Pour a drizzle of oil into a large pan, sauté the onion for 1 minute. Add the peas, salt, pepper and cook for 2 more minutes, then remove. In the same pan, add a little oil. 
  4. Beat the eggs into an omelette then cook them for 5 minutes, remove to a plate. Then cook the bacon for 2 minutes. 
  5. Fluff the rice with a fork. Pour it into the pan and mix. Cook over high heat for 5 minutes. Then add all the other ingredients, cook for 1 minute. 
  6. Stir in the omelette cut into strips, mix, then add the chives and coriander.
