WHITE BEAN SOUP
Serving: for 4 people
Preparation time: 20 minutes
Cooking time 25 minutes
Ingredients:
- 1 smoked ham
- 2 carottes
- 1 medium onion blond
- 1 thumb of garlic
- 1 sprig of thyme
- Some sprigs of ciboulette
- 20 grams butter
- 70 cl chicken stock
- 400 grams of white beans, canned
- 4 thick slices of bread
- 1 tbsp. of olive oil
- Salt and pepper
Preparations:
- Preheat the oven to 180 °C.
- Peel the onion, garlic and carrots. Mince it all.
- Heat the butter in a casserole. Add vegetables and thyme then cook for 5 minutes. Add the broth, the undrained beans and the whole ham.
- Cook over medium heat for 20 minutes.
- Meanwhile, cut pieces of bread. Drizzle them with olive oil and mix.

- Soup. Cut the ham into pieces and put it back in it. Salt and pepper.
- Serve with the croutons and sprinkle with chopped chives.
