 Spaghetti Salad of

Zucchini with Prawns

Ingredients:

  • 300g zucchini spaghetti 
  • 2 garlic cloves 
  • 1 spring onion 
  • 1 handful of tomatoes
  • 1 handful of young shoots cherries 
  • 8 tbsp of olive oil 
  • 50 grams parmesan 
  • 20 grams pine nuts 
  • The juice and zest of a lemon
  • 16 prawns 
  • Salt and pepper


Preparations:

  1. Peel, degerm and press the garlic. 
  2. Chop the spring onion. 
  3. Rinse the cherry tomatoes with clear water. 
  4. Mix olive oil with lemon juice and zest. 
  5. Add the garlic, the chopped spring onion and season with salt and pepper. 
  6. Peel the prawns and marinate them for 30 minutes. 
  7. Brown the prawns for 2 to 3 minutes in a pan. 
  8. In a serving dish, mix the zucchini spaghetti with the prawns, young shoots and cherry tomatoes. 
  9. Sprinkle with parmesan shavings and pine nuts, then serve immediately.
