Spaghetti Salad of
Zucchini with Prawns

Ingredients:
- 300g zucchini spaghetti
- 2 garlic cloves
- 1 spring onion
- 1 handful of tomatoes
- 1 handful of young shoots cherries
- 8 tbsp of olive oil
- 50 grams parmesan
- 20 grams pine nuts
- The juice and zest of a lemon
- 16 prawns
- Salt and pepper
Preparations:
- Peel, degerm and press the garlic.
- Chop the spring onion.
- Rinse the cherry tomatoes with clear water.
- Mix olive oil with lemon juice and zest.
- Add the garlic, the chopped spring onion and season with salt and pepper.
- Peel the prawns and marinate them for 30 minutes.
- Brown the prawns for 2 to 3 minutes in a pan.
- In a serving dish, mix the zucchini spaghetti with the prawns, young shoots and cherry tomatoes.
- Sprinkle with parmesan shavings and pine nuts, then serve immediately.
