Potatoes Stuffed with Onions and Cheese

Ingredients:
- 100 g smoked bacon strips
- 8 medium potatoes
- 2 onions
- 150 grams of cheddar cheese
- 40 grams butter
- 2 cups heavy cream
- 5 cl of olive oil
- salt, pepper
Preparations:
- Cook the potatoes, with their skins on, for 30 minutes in salted boiling water. Drain them and refresh them under cold water.
- Peel and finely chop the onions. Melt them over low heat, without colouring, with a little butter, for 5 minutes. Preheat the oven to 200°C.
- Slightly cut off the tops of the potatoes, hollow them out delicately with a spoon. Mash the collected flesh with a fork in a salad bowl. Add the bacon bits, 4 small cheeses cut into pieces, the onions, the fresh cream. a little salt and pepper.
- Fill the potatoes with this mixture. Cut the remaining cheeses in half, lay them on the potatoes. Place these in a baking dish.
- Sprinkle the potatoes with a drizzle of olive oil, put in the oven and let brown for 15 minutes. Serve hot.
