Potato Croquettes
with Cheese
Servings for 15 to 20 croquettes

Ingredients:
- 1 kg of apples of mashed earth
- 1 leek
- 1 small minced onion
- 1/2 Caprice des Dieux or soft cheese
- 1 beaten egg 30 g of butter
- 1/2 c. grated nutmeg
- salt and pepper
- breadcrumbs
- sunflower oil for frying
Preparation:
- Wash and dry the leek, cut it into strips. Brown the leek and the minced onion in the butter for 3 minutes medium heat. Reserve.
- Peel the potatoes and steam them. Mash them with a fork or a potato masher, heat the puree in a saucepan, stirring all the time for 5 minutes. Add the cooked leek and onion. Add salt and pepper. add the nutmeg, set aside
- Remove the white crust from the Caprice des Dieux. Cut the cheese into small pieces. Add them to the mash of cooled potato. Place the mixture in the fridge for 30 minutes
- Form croquettes using 2 tablespoons or your hands Brush the croquettes with beaten egg Roll them in the breadcrumbs. Place again 30 minutes in the refrigerator or in the freezer
- Heat the frying oil to 180°C Dip the croquettes 4 by 4 in the very hot oil Turn them in the oil for an even browning. Place the cooked croquettes on a paper towel before serving.
