The magic cake is a cake thanks to which with a single dough it generates three different consistencies: a layer of soft sponge cake, one of cream and pudding on the bottom.

An intelligent cake that has many variations such as the very tasty one with cocoa, but many others such as the one with coffee, fruit, Nutella.

Ingredients 

  • 4 eggs at room temperature
  • 150 g of sugar
  • 120 g of flour
  • 500ml of milk
  • 130 g of butter
  • 5 ml of vanilla flavouring
  • 1 teaspoon of lemon juice


Instructions:

  1. First of all, melt the butter and let it cool.
  2. Put the milk in a saucepan and heat it without bringing it to the boil, then turn off the heat and add the vanilla flavouring.
  3. Separate the yolks from the whites, leaving the latter aside, and whip them with the sugar. Add the butter and mix well, then slowly add the warmed milk, mixing well.
  4. At this point, add the sifted flour, making sure that no lumps form.
  5. This is a very important step, otherwise pass the dough through a sieve if lumps should form.
  6. Finally, whip the egg whites until stiff with a few drops of lemon and mix them with the dough, being careful not to disassemble them. You will have to obtain a very liquid consistency.
  7. Line a 22 cm diameter cake tin with parchment paper and bake at 150°C for about 1 hour and 15 minutes.
  8. When the cake has finished cooking, let it cool for an hour at room temperature and then transfer it to the fridge to rest for two or three hours.
  9. Once the time has passed, take out the magic cake, unmold it and consume it in slices, sprinkling with icing sugar.
