Leeks Quiche



Difficulty: Very easy 

Preparation time:20 minutes 

Cooking time: 30 minutes

Servings: 6 people



Ingredients:

  • 1 Pastry
  • 3 Leeks
  • 3 Eggs
  • 15 cl Liquid cream
  • 1 pinch Nutmeg
  • 1 tbsp. tablespoons olive
  • 40 g Emmental cheese
  • Salt
  • Pepper 


Preparation steps

  1. Peel the leeks, rinse them carefully under cold water then slice them. Heat the oil in a sauté pan, add the leeks then cook for 10 minutes, stirring often.
  2. Preheat the oven to 180°C (th.6). Roll out the dough then line a tart pan and prick the bottom with a fork.
  3. In a bowl, whisk the eggs with the cream.
  4. Add the grated Emmental cheese and nutmeg, salt and pepper.
  5. Spread the leeks on the dough then cover with the egg/cream mixture. Bake and cook for 30 minutes. Serve hot.


Tips and tricks for Quiche with leeks

You can replace the Emmental with diced goat cheese.
