Leeks Quiche
Difficulty: Very easy

Servings: 6 people
Ingredients:
- 1 Pastry
- 3 Leeks
- 3 Eggs
- 15 cl Liquid cream
- 1 pinch Nutmeg
- 1 tbsp. tablespoons olive
- 40 g Emmental cheese
- Salt
- Pepper
Preparation steps
- Peel the leeks, rinse them carefully under cold water then slice them. Heat the oil in a sauté pan, add the leeks then cook for 10 minutes, stirring often.
- Preheat the oven to 180°C (th.6). Roll out the dough then line a tart pan and prick the bottom with a fork.
- In a bowl, whisk the eggs with the cream.
- Add the grated Emmental cheese and nutmeg, salt and pepper.
- Spread the leeks on the dough then cover with the egg/cream mixture. Bake and cook for 30 minutes. Serve hot.
Tips and tricks for Quiche with leeks
You can replace the Emmental with diced goat cheese.
