Ingredients

  • 3 round pears 
  • 2 eggs 
  • 1 roll of puff pastry 
  • 100 g of soft butter (+ for the dough)
  • 300 g of semolina sugar • 100 g of almond powder 
  • 25 g of sliced almonds
  • 1 vanilla pod 
  • 1 teaspoon of vanilla extract 
  • Icing sugar


Preparations:

  1. Peel the pears and cut them in half.
  2. Using a Parisian spoon, remove the heart with the seeds.
  3. Bring 1.5 l of water to a boil in a small saucepan with 200 g of sugar and the split and shaved vanilla pod. Place the half peas in it and let them cook at a low simmer, over low heat, for 1 hour.
  4. Let them cool completely in the syrup, off the heat.
  5. Whisk the butter with the remaining sugar with a mixer, until you get a creamy consistency. Stir in the eggs one by one, then the almond powder. Finally, add the sliced almonds (reserve a few) and the vanilla extract. Mix with a spatula. Store it
  6. This almond cream 2 hours in the refrigerator.
  7. Preheat the oven to 180 °C. Unroll the dough in a buttered pie dish.
  8. Prick the bottom with a fork.
  9. Spread the almond cream on the dough. Drain the pears well and cut them into strips in the width. Arrange them on the pie, keeping their shape, and lay them on the bed of almond cream, so that the strips juxtapose flat.
  10. Sprinkle with the remaining sliced almonds.
  11. Bake for 25 to 30 minutes; the dough and almond cream must be well cooked and well browned.
  12. Let it cool completely.
  13. Serve the almond pear pie decorated with a veil of icing sugar.
