Spaghetti with
Cod, Raisins
and Pine Nuts

Ingredients:
- spaghetti 320 grams
- soaked cod 300 grams
- raisins 30 grams
- pine nuts 20 grams
- onion
- aromatic bunch (sage, fresh marjoram, rosemary)
- dry white wine
- extra virgin olive oil
Preparation:
- Clean the cod from any skins and bones, then break it by hand. Chop half an onion, heat 2 tablespoons of oil in a pan and let it dry.
- Mix with the whole raisins, soaked and drained, and the pine nuts.
- Add the pieces of cod as well. Sprinkle with a third of a glass of wine, let it evaporate and let the sauce cook for about 3 minutes.
- In the meantime, cook the spaghetti in plenty of slightly salted boiling water and drain them al dente.
- Sauté them in the pan with the sauce, complete with the chopped aromatic bunch and, if necessary, add another tablespoon of oil, then distribute the spaghetti in the individual dishes and bring to the table right away.
