Soy Glazed Chicken

Cooking time: 35 minutes
Servings: 4 persons
Ingredients:
- 2 tbsp canola oil
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 6 tbsp low sodium soy sauce
- Kosher salt and black pepper
- Bay leaves
- 8 small bone-in and skin-on chicken thighs (about 3 pounds)
- 1 carrot, cut into disc
- Lemon wedges, for serving
Preparation:
- Clean the chicken thigh remove extra fat.
- In a big bowl add the seasonings like minced garlic, minced ginger, soy sauce, bay leaves, salt and pepper. Marinate for at least 30 minutes or until overnight.
- Transfer the marinated chicken in a pan. Start cooking it in medium to high heat the chicken skin position at the bottom.
- When the skin are browned turn the heat into medium to low and simmer for 15 minutes. Turn the chicken thigh from time to time.
- Add the chopped carrot, add a little water if necessary, simmer until the sauce reduces down to a thick jam-like syrup.
- Serve hot with white rice. Bon appetit.
Tips
The sauce can be made ahead and refrigerated overnight; just rewarm it in the microwave or stovetop before using.
If gluten is a concern, substitute the soy sauce with low-sodium tamari.
