Pan Roast Beef With
Madeira Sauce

Ingredients:
FOR THE ROAST MEAT:
- 800g beef
- 3 tbsp. port wine
- 3 tbsp. water
- 30g butter
FOR THE SAUCE:
- 40g butter
- 50g carrots
- 2 shallots, chopped
- 1 onion
- 2 dl of madeira
- 1 bouquet garni
- roast cooking juices
Preparation:
- Brown 1 roast beef of about 800 g in a saucepan with 30 g of butter, season, moisten with 3 tbsp. water and 3 tbsp. madeira soup. It should cook for about 15 minutes.
- On the other hand, prepare the sauce: brown the diced carrots, 1 chopped onion and 2 shallots in 40 g of butter; salt, pepper, moisten with 2dl of Madeira and the cooking juices of the roast.
- Add 1 bouquet garni and let reduce by half, set aside.
- Add the sauce to the roast and serve hot.
