Ingredients:

 

FOR THE ROAST MEAT:

  • 800g beef
  • 3 tbsp. port wine
  • 3 tbsp. water
  • 30g butter


FOR THE SAUCE:

  • 40g butter
  • 50g carrots
  • 2 shallots, chopped
  • 1 onion
  • 2 dl of madeira
  • 1 bouquet garni
  • roast cooking juices



Preparation:

  1. Brown 1 roast beef of about 800 g in a saucepan with 30 g of butter, season, moisten with 3 tbsp. water and 3 tbsp. madeira soup. It should cook for about 15 minutes.
  2. On the other hand, prepare the sauce: brown the diced carrots, 1 chopped onion and 2 shallots in 40 g of butter; salt, pepper, moisten with 2dl of Madeira and the cooking juices of the roast.
  3. Add 1 bouquet garni and let reduce by half, set aside.
  4. Add the sauce to the roast and serve hot.
