Couscous with Vegetables and Olive Ragout

 COUSCOUS WITH VEGETABLE AND OLIVE RAGOUT



Cooking time: 20 minutes

Serving: for 6 people


Ingredients:

  • a package of couscous 
  • 450 g canned tomato 250 g carrots 
  • 150 g courgettes 
  • 100 g pitted green olives 
  • olive oil 
  • dry white wine onion 
  • parsley 
  • marjoram 
  • salt


Preparations:

  1. Soak the couscous according to the instructions on the package.
  2. Peel the courgettes, wash them and cut them into wedges. 
  3. Scrape and trim the carrots, wash and cut them in the same way. 
  4. Slice the olives. 
  5. Heat 4 spoonfuls of oil in a pressure cooker and gently fry the finely chopped onion. 
  6. Add zucchini, carrots and olives. 
  7. Leave to infuse, then drizzle with half a glass of wine and let it evaporate.
  8. Complete with the tomato and chopped parsley and marjoram, salt, mix, close the pressure cooker and start cooking for 10 minutes.
  9.  Serve the couscous with its sauce.


Followed by a choice of cheeses or a rich dessert, for example an egg-based cream, this dish is the perfect solution for a family dinner.
