COUSCOUS WITH VEGETABLE AND OLIVE RAGOUT
Cooking time: 20 minutes
Serving: for 6 people
Ingredients:
- a package of couscous
- 450 g canned tomato 250 g carrots
- 150 g courgettes
- 100 g pitted green olives
- olive oil
- dry white wine onion
- parsley
- marjoram
- salt
Preparations:
- Soak the couscous according to the instructions on the package.
- Peel the courgettes, wash them and cut them into wedges.
- Scrape and trim the carrots, wash and cut them in the same way.
- Slice the olives.
- Heat 4 spoonfuls of oil in a pressure cooker and gently fry the finely chopped onion.
- Add zucchini, carrots and olives.
- Leave to infuse, then drizzle with half a glass of wine and let it evaporate.
- Complete with the tomato and chopped parsley and marjoram, salt, mix, close the pressure cooker and start cooking for 10 minutes.
- Serve the couscous with its sauce.
Followed by a choice of cheeses or a rich dessert, for example an egg-based cream, this dish is the perfect solution for a family dinner.
