 Yogurt Marinated Prawn Skewer

Servings: 4 persons,  Preparation: 25 minutes, Marination: 30 minutes,  Cooking time: 10 minutes


Ingredients:

  • 20 shelled prawns
  • 200 grams broad beans
  • 1 grapefruit
  • 1 shalllot
  • a few coriander leaves
  • a few young cantal copes
For the lemon marinade:
  • 1 cm fresh ginger, shredded
  • 2 yogurt
  • 1 pinch garam masala
  • pinch ground cumin
  • 1 pinch of turmeric
  • salt and pepper


Instructions:
  1. Prepare the marination: pour the yogurts in a salad bowl and mix. Add the lemon juice and spices, salt and pepper. Add the prawns and mix until smooth coated. Marinate for 30 minutes in the fridge.
  2. Finely chop the shallots, immerse the broad beans in a pan of salted boiling water for about 5 minutes. Let them cool and remove their skin. Peel the grapefuit raw and remove the supremes
  3. Pour the prawn and the yogurt marinated into a very hot pan. Brown them about 5 minutes, mixing well. Assemble the skewers 5 marinated prawns.
  4. Mix the broad beans, shallots and the grapefruit seeds in a salad bowl. Add the cantal shavings.
  5. Serve the skewers with the bean salad drizzle with olive oil and sprinkle with finely chopped coriander leaves just before serving.
