Ingredients:
- 5 large eggs
- 125 grams icing sugar
- 75 ml double cream
- 50 grams ground almonds
- 1 teaspoon vanilla extract
- 25 grams butter
- 50 flaked almonds
- vanilla ice cream or crème fraîche to serve
Instructions:
- Beat the eggs in a large bowl with 100 g of the icing sugar, then cream, ground almonds and vanilla extracts if using. Preheat the oven to 175 - 200°C
- Mel the butter in a large ovenproof frying pan and pour in the egg mixture. Cook very gently for 8 to 10 minutes, stirring occasionally until the eggs just begins to set. Scatter over the flaked almonds and sprinkle with the remaining icing sugar, the place in the preheated oven for about 10 minutes or until set.
- Remove the pan from the oven and cook under preheated grill for 2 to 3 minutes until golden, then cool slightly and cut into slices. Serve with the vanilla ice cream or crème fraîche.
