Super Tasty Rice
When you're short on time, a single-rice based dish could be the solution. This recipe, for example, makes both a first course and a second course!
Preparation time: 10 - 15 minutes
Cooking time: 15 - 20 minutes
Serving: 4 people
Ingredients:
- 225 grams long grain rice
- 600 ml vegetables or chicken stock
- 1 tablespoon of extra virgin olive oil
- 4 slices of smoked bacon, diced
- 1 small onion, finely chopped
- 1 re pepper, peeled and diced
- 85 grams button mushrooms, sliced
- 85 grams canned peas, drained
- 85 grams canned corns, drained
- 1 tablespoon chopped parsley
Or:
- For a vegetarian dish, leave out the bacon and before serving the rice sprinkle with a grated cheese.
- For an even richer dish and hearty, add 225 grams of cooked minced chicken.
- If you want the rice to be yellow, dissolve a bag of saffron in the broth
Procedure:
- Put the rice in the pan and add the broth, bring to boil and mix, cover the pan and cook over the low heat for 10 - 12 minutes.
- While the rice is cooking, heat the oil in the pan and fry the smoked bacon and onion fora few minutes.
- Add the red peppers and mushrooms and cook for another 2 - 3 minutes.
- Add the peas and the corn and mix well, then remove the pan from the heat.
- When the rice is cooked, remove the saucepan from the heat and fluff the rice with one fork to separate the grains well.
- Transfer the rice to a heated serving dish and season, stirring gently. Sprinkle with parsley and serve.
