  Super Protein Shrimp Poke Bowl


Crunchy and creamy Shrimp Poke Bowl is made with tender cooked shrimp, sweet fresh mango, crunchy veggies, creamy avocado and drizzled with the best spicy mayo sauce. Perfect for healthy lunch or dinner loaded with super protein.

Preparation time: 30 minutes    Cooking Time: 5 minutes    Servings: 4 persons


Ingredients:

For the Mayo Sauce:

  • 1 cup of mayo
  • 1/2 lemon, juiced
  • 1 clove fresh garlic, finely chopped
  • 3 Tablespoon of chilli sauce (optional 1 tbsp of concentrated tomato sauce for less spicy taste)
  • 1/8 teaspoon fine salt
For the Shrimp Poke Bowl:
  • 300 grams Shrimps, cleaned
  • 2 cups shelled edamame (thawed)
  • violet onion, as needed, thinly sliced
  • 3 medium beets ( or pre-cooked beeets)
  • 12 radishes
  • 1 avocado
  • 2 medium carrots 
  • 1 mango
  • 1 cucumber
  • 1 cup fresh corn kernels
  • 1 tablespoon olive oil
  • salt and pepper
  • Spicy mayo for drizzling ( use lime juice instead of hot sauce for non-spicy version)
  • For garnish: Toasted sesame seeds, microgreens or sprouts (optional) or fresh coriander leaves


Instructions:
  1. Cook the beets in a boiling water about 40 minutes it depends on the sizes. You can use pre-cooked beets that are packed and ready to eat. Peel the beets according to the recipe, then slice them into 1/2 inch cubes.
  2. When the beets are cooked, place them in a bowl and stir in together the soy sauce, grated garlic, ginger, minced green onion and salt.
  3. Prepare the veggies: Thinly slice the onions, cucumber and radishes, Slice the avocado. Grate the carrots or peel strips with a veggie peeler. Sprinkle all the veggies with salt.
  4. Cook the shrimp according to the package. Stir in some olive oil, salt and pepper to taste for some minutes.
  5. Place the copped lettuce as a base in a bowl followed by the other vegetables. Top with the cooked shrimp and garnish it with your choice. Drizzle with spicy Mayo and serve.
