Stuffed Cherry Tomatoes with Tuna
Preparation time :20 minutes
Servings: for 4 people
Ingredients:
- 8 small Calabrian tomatoes or sardines
- 1 boiled egg
- 125 g of low-fat yogurt
- 1/2 tablespoon of mustard
- 140 grams of tuna in brine
- 1 teaspoon of chopped gherkins
- 1 teaspoon of chopped chives
- 1 teaspoon of capers
- salt and pepper
Instructions:
- Wash the tomatoes and cut off the tops.
- Drain them with a teaspoon, sprinkle with salt and turn them upside down to remove excess water.
- With the crescent, chop the tuna very finely.
- Prepare a light mayonnaise by beating the boiled egg that you have minced in the blender with the mustard, yoghurt, salt and pepper.
- Incorporate the tuna sauce, add the gherkins, then the chopped capers and finally the chives.
- Stuff the cherry tomatoes with the filling using a piping bag.
- Cover with the cut part, like a hat. Serve fresh.
