 Stuffed Cherry Tomatoes with Tuna 


Preparation time :20 minutes

Servings: for 4 people


 Ingredients:  

  • 8 small Calabrian tomatoes or sardines
  • 1 boiled egg 
  • 125 g of low-fat yogurt 
  • 1/2 tablespoon of mustard 
  • 140 grams of tuna in brine 
  • 1 teaspoon of chopped gherkins 
  • 1 teaspoon of chopped chives
  • 1 teaspoon of capers 
  • salt and pepper 


Instructions:

  1. Wash the tomatoes and cut off the tops. 
  2. Drain them with a teaspoon, sprinkle with salt and turn them upside down to remove excess water. 
  3. With the crescent, chop the tuna very finely. 
  4. Prepare a light mayonnaise by beating the boiled egg that you have minced in the blender with the mustard, yoghurt, salt and pepper. 
  5. Incorporate the tuna sauce, add the gherkins, then the chopped capers and finally the chives. 
  6. Stuff the cherry tomatoes with the filling using a piping bag. 
  7. Cover with the cut part, like a hat. Serve fresh.
