 Soft Savoury Muffins




Savory muffins are perfect for all occasions, you can use them as an aperitif, for lunch or for dinner instead of bread and pizza, you can easily take them to the beach, on a trip, picnic out of town. Ideal for a genuine and healthy snack, even for children, they are perfect for buffect and parties of all kinds.

Serving: 8 Portions about 6-8 muffins


Ingredients:

  • 240 grams of flour
  • 200 ml milk
  • 1 sachet of instant yeast
  • 100 grams of cheese of your choice
  • 1 pinch of salt 
  • 40 ml peanut oil
  • 2 egg
  • 80 g cooked ham
  • 4 tbsp grated cheese ( grana, parmessan, pecorino, etc..)

Preparation:

  1. To prepare these delicious soft savory muffins, start by placing some dry ingredients in a bow flour, baking powder and a teaspoon of salt, and mix with a spoon
  2. Instead, pour the liquid ingredients into another container, namely: the egg, milk and oil and mix the latter with a fork or spoon 
  3. At this point, pour the liquid ingredients into the dry ones and mix quickly and briefly with a spoon or spatula, just long enough for the ingredients to mix together 
  4. Also add the grated cheese, the cooked ham and the cheese of your choice cut into cubes or small pieces and mix again for a few moments to incorporate them into the mixture 
  5. Grease the muffin liners (if you are using alluminum ones or the mold, skip this step if you have paper liners available) and fill each one with a little of the mixture, but do not reach the edge as they will grow during cooking 
  6. Bake the muffins in a preheated static oven at 180 degrees in the middle part and cook for 20-25 minutes. If they start to darken excessively on the shell, cover them with a sheet of parchment paper to finish cooking.


TIPS FOR OTHER INGREDIENTS 

For veggie muffins:

  • 200 grams of raw vegetables of your choice (carrots, cherry tomatoes, courgettes, rocket + a or 200 g of vegetables cooked in a pan, mixed grills or leftovers (peas, aubergines, spinach...)
  • 200 grams of smoked scamorza (which you can replace with other stringy cheese)
  • fresh basil
For olive muffins: 
  • 200 grams of pitted black or green olives
  • 200 grams of smoked scamorza (which you can replace with other stringy cheese)
  • fresh basil, mint or thyme
For salmon muffins:
  • 200 grams of smoked salmon
  • fresh mint or chopped chives


STORAGE

The very soft savory muffins keep well at room temperature for about 2-3 days under a cake hood, in an airtight container or well sealed with transparent film.
