Shrimp Paella

Ingredients:
- 2 cups medium grain white rice
- 12 shrimps, peeled
- 1 cup frozen pea
- 4 medium tomatoes, chopped
- 2 crushed garlic
- 1 large brown onion, slice
- 1 tablespoon olive oil
- 1/4 teaspoon saffron
- 2 teaspoons sweet paprika
- 2 cups of chicken broth
- chopped parsley to serve
Instructions:
- Combine saffron and boiling water in a heatproof bowl. Rest for 5 minutes.
- Meanwhile, heat the oil in a frying pan over medium-high heat. Add the onion and garlic to the skillet. Cook, stirring, for 5 minutes or until onion has softened. Add the mixture of saffron and paprika. Cook, stirring, for 1 minute or until fragrant. Add the tomato. Cook, stirring, 5 minutes or until tender.
- Add the rice. Stir to coat well. Add broth. Bring to a boil. Reduce to medium heat. Simmer, uncovered, for 20 minutes or until the broth is absorbed.
- Add the prawns and peas. Cook covered for 10 minutes or until the rice is tender. Serve with chopped parsley.
