Shrimp Paella

  Shrimp Paella


Prep rime: 25 mins  Cooking: 30 mins Serving: 6 persons

Ingredients:

  • 2 cups medium grain white rice
  • 12 shrimps, peeled
  • 1 cup frozen pea
  • 4 medium tomatoes, chopped
  • 2 crushed garlic
  • 1 large brown onion, slice
  • 1 tablespoon olive oil
  • 1/4 teaspoon saffron
  • 2 teaspoons sweet paprika
  • 2 cups of chicken broth
  • chopped parsley to serve




Instructions:
  1. Combine saffron and boiling water in a heatproof bowl. Rest for 5 minutes.
  2. Meanwhile, heat the oil in a frying pan over medium-high heat. Add the onion and garlic to the skillet. Cook, stirring, for 5 minutes or until onion has softened. Add the mixture of saffron and paprika. Cook, stirring, for 1 minute or until fragrant. Add the tomato. Cook, stirring, 5 minutes or until tender.
  3. Add the rice. Stir to coat well. Add broth. Bring to a boil. Reduce to medium heat. Simmer, uncovered, for 20 minutes or until the broth is absorbed.
  4. Add the prawns and peas. Cook covered for 10 minutes or until the rice is tender. Serve with chopped parsley.
