SAUTEED PRAWNS
Time required: 80 minutes
Ingredients:
600 g of headless shrimps
- 50 g of shelled peas
- 1 egg white
- 1 pinch of monosodium glutamate
- 1 teaspoon of salt
- 1 tablespoon of potato starch
- 2 tablespoons of Chinese wine Shäo Xing lão jiu
- fry oil
- For the sauce:
- 2 tablesooons of oil
- 1 pinch of monosodium glutamate
- 1 pinch of salt
- 1 tablespoon of Chinese wine Shão Xing lão jiu
Preparation:
- Shell the prawns, remove the innards, wash and dry them. Beat the egg white, add seasonings or glutamate, salt, potato starch, wine, mix and dip the prawns in it, leaving it to rest for a few minutes.
- Heat a little oil to fry in the wok, e sauté the prawns and peas for a minute: drain them. Clean the wok and prepare the sauce by simply heating 2 tablespoons of fresh oil with a little salt, glutamate and a spoonful of rice wine: add the shrimps to the sauce, mix again and leave to reduce for a couple of minutes.
