SALAD WITH 3 QUINOAS, CHICK PEAS
Good to know: this salad is a source of complete protein [same as meat], because it combines legumes (chickpeas) and cereals and quinoa, considered as such].
For 4 persons Preparation: 25 mins Cooking: 10 mins
Ingredients:
- 1/2 cucumber
- 1/4 pomegranate
- 10 pink radishes
- 1 untreated yellow lemon
- 1 clove of garlic
- 1 small bunch of flat-leaf parsley
- 250 g quinoa trio
- 1 can of chickpeas
- pumpkin seeds
- rosemary
- 4 tbsp. tablespoon olive oil
- salt and pepper
Procedure:
- Cook the quinoa trio for 10 minutes in a saucepan of salted boiling water then let cool.
- Collect pomegranate seeds using a spoon and set aside Wash the cucumber, peel it partially and cut it into thin slices. Wash the pink radishes and cut them into thin slices. Zest the lemon and squeeze it. Peel the garlic and chop it. Leaf the parsley.
- Mix the drained chickpeas with quinoa, cucumber, radishes and the pomegranate in a salad bowl.
- Put the lemon zest and juice in a bowl and add the olive oil. Season with salt and pepper, then add the peeled and chopped garlic clove.
- Pour this vinaigrette into the previous preparation. Mix everything well and sprinkle with parsley before serving.
