 Salad Radish, Cucumbre and Spinach

Servings: for 4 people 

Ingredients:

  • 3 small cucumbers 
  • 4 red chicory
  • 2 lettuce hearts 
  • 200 g baby spinach 
  • 200 g cherry tomatoes 
  • 200 g peas 
  • 1 bunch of radishes 2c. 
  • 1/2 tsp lemon juice 
  • 100 g canned chickpeas 
  • 1 handful of raisins 
  • 1 handful of pistachios 
  • 1 handful of pumpkin seeds 
  • handful of flax seeds 
  • tbsp coffee hazelnut oil 
  • sweet soy sauce


Preparation:

  1. Steam the peas in for about 10 minutes. 
  2. Strip, wash and spin dry the different lettuces, during this time. 
  3. Cut the cherry tomatoes into quarters, the radishes and the cucumbers into rings. Rinse the chickpeas. 
  4. Divide the different salads and baby spinach into 4 bowls. 
  5. Add the tomato wedges, radish and cucumber slices. 
  6. Then add the peas and chickpeas, then all the seeds and raisins. 
  7. Season at the last moment by mixing the oil, lemon juice and sweet soy sauce.
