Potato Salad

Ingredients:
- 500 grams potatoes
- 2 avocados
- 125 grams young shoots
- 1 lemon, juice
- 2 spring onions
- 8 radis
- a few coriander leaves
- 3 tablespoon olive oil
- 3 tablespoon cider vinegar
- salt and pepper
- Cook the potatoes in a pan for 20 to 30 minutes. Then drain them, refresh them in cold water and peel them while they are still hot.
- While the potatoes are cooling, peel the onion and cut them into small dice. Wash and clean the radishes, cut them into thin slices. Wash the herbs and finely chop. Cut the avocados in half, remove the seeds and cut into dice.
- Cut the potatoes into slices. In a large bowl, combine the potatoes, onions, olive oil, vinegar, lemon, salt and pepper. Let stand for some minutes.
- Add the cut radishes, herbs, the avocados to the potato salad, season with salt and pepper.
