Pea Salad with Cereals

Pea Salad with Cereals 


Prep time: 20 min. Cooking 10 mins. For: 6 people


Ingredients:

  • 300 g shelled fresh peas
  • 300 g shelled fresh broad beans
  • 2 limes
  • 1/2 bunch mint leaves
  • 1/2 bunch coriander
  • 300 g bulgur
  • 200 g cooked chick peas
  • 4 tbsp olive oil
  • 1 tbsp honey
  • chilli powder
  • salt and pepper

Instructions:
  1. Bring a pot of boiling salted water to boil. Add the peas and beans and cook for 5 minutes. Drain them and refresh them immediately in cold water. Peel the beans.
  2. Rinse the chickpeas. Cook the bulgur for 10 minutes in salted boiling water. Drain them and let them cool. Wash, dry, strip the herbs, then chop them.
  3. sQueeze the lemons over a salad bowl. Add oil, honey, salt pepper and few pinches of chilli. mix.
  4. Add the vegetables, bulgur and the herbs in the salad bowl. Mix thoroughly. Let cool until ready to serve.
