Pansit Bihon With Veggies
Pancit is a classic Filipino recipe. It's a quick and stir-fried rice noodle with a variety savory taste of shrimp, chicken, pork and vegetables
Pancit is both the name of the dish and also one of the ingredients. Pancit is the word for "noodles" and there are different types of pancit, with pancit Canton—egg noodles, pancit Bihon—rice noodles and pancit Miki—thick egg noodles.
Make traditional pancit with chicken breast, meats (pork is very popular), shrimp or only vegetables; the method is the same except the cooking times will be longer for the meat.

Ingredients
- 3 cooked chicken breast
- 2 cups fresh green beans
- 3 cloves garlic
- 2 carrots, medium
- 1/4 cabbage
- 1 Red bell pepper
- 1/2 onion
- 1 package rice noodles
- 1/4 cup soy sauce
- 2 tablespoon olive oil
Instructions
1. Use 2 cups of water to boil the chicken. Save the broth. Take the skin and debone chicken after cooling. Add soy sauce to the broth.
2. Add bihon noodles to about 3/4 of warm broth. Let it soak.
3. Peel and diagonally slice the carrots. Cut each slice into thin strips, set aside. Finely chop the cabbage then set aside.
4. Cut the bihon noodles with a pastry scissor into small pieces after soaking.
5. Sauté chopped garlic in oil over medium high heat, add sliced onions, add the carrots. Stirring continously. Sauté for 2-3 minutes. Add the diced, deboned chicken.
6. Add sliced green beans. Add a little of the broth to the mixture, so that it will not burn.
7. Turn heat to medium then add chopped cabbage, Stir constantly. Do not overcook the vegetables.
8. Add about 1 tablespoon of soy sauce, black pepper to taste about 1/4 teaspoon. Stir until all the ingredients are heated through. Remove from the pan. Set aside.
9. Pour cut noodles into the used pan to cook vegetables, stir constantly. The noodles will stick. Add broth as needed to keep the noodles from sticking. Cook until the noodles are tender. Add water as needed.
10. Mix cooked noodles and vegetables together before serving. A bit of fresh lemon juice over the noodles adds an extra zing to taste. Serve with steamed rice. Enjoy!
