Mediterranean Stuffed Aubergines
A dish full of flavour and joy for a simple recipe, a real treat!

Ingredients:
- 3 long aubergines
- 100 g of tuna
- 100 g of pitted green olives
- 60 g of capers
- 3 anchovies
- 2 slices of bread
- some parmesan and romano
- 2 medium ripe tomatoes, cut into dice
- garlic
- violet onion
- some parsley
- salt and pepper to taste
- olive oil
Preparation:
- Cut the aubergines in two, hollow them out by removing the pulp, and soak them in water and salt, cut the pulp into chunks and fry it.
- Then put it on absorbent paper so that it dries well from the oil, blanch all the tomatoes in a pot of boiling water, after making a cross underneath, and so they peel very well, leave the seeds too.
- Remove and cut the tomatoes into chunks and put them in a bowl, cut into dice, the onion and garlic, parsley, mince the tuna, anchovies. Grind the bread, it should become like bread crumbs texture. Finish putting all the ingredients including the inside of the fried aubergines
- Season with salt and pepper and mix everything well dry the dug out aubergines, then with a spoon, fill all the aubergines with the prepared mixture, and place them in a baking tray, covered with paper, lay them side by side sprinkle some breadcrumbs and drizzle of oil over them.
- Bring them in a hot oven at 180 degrees for 1 hour then serve hot.
