 Mâche Salad, Grapefruit & Pomegranate


Preparation time: 20 minutes
Servings: for 4 persons

Ingredients:
  • 2 grapefruits 
  • 500 g of lamb's lettuce 
  • 1 pomegranate 
  • A few purple basil leaves 
  • 100 g parmesan shavings 
  • 1 large handful of shelled walnuts 
  • 1 C. olive oil 
  • 1 C. walnut oil 

Preparations:
  1. Wash and spin dry the lamb's lettuce. Divide it among 4 plates. 
  2. Cut the grapefruit in half, then remove the quarters. 
  3. Add them to the plates. 
  4. Cut the pomegranate in half, and seed it on the plates. 
  5. Thin the basil on top. 
  6. Spread the parmesan shavings. 
  7. Crush the walnuts and sprinkle over the salad. 
  8. Season at the last moment, by mixing the olive oil, walnut oil and soy sauce in a small bowl.

Notes:
Vitamin shoot: don't throw away grapefruit juice at the time to remove the quarters. put it on in a glass, either to drink it or to lengthen the vinaigrette with. Consume it quickly, before the quality of the vitamins does not deteriorate.
