Leche Flan (Filipino Creme Caramel)

Ingredients:
- 1 can condensed milk
- 1 cup fresh milk or evaporated milk
- 8 eggyolks
- 100 grams white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
Preparation:
- Using all the eggs, Separate the yolk from the egg white, only the egg yolks will be used). Place the egg yolks in a big bowl then beat them using a fork or an electric beater
- Add the condensed milk and fresh milk and vanilla, mix well.
- Heat the mold (llanera) using low fire. Pour-in the sugar and caramelise it until light color brown. You can also use ready made store-brought caramel and pour 1 to 2 tablespoon directly into the llanera or remekins.
- Spread the caramel evenly flat of the mold. Wait for 5 minutes then pour the egg yolk and milk mixture on the molds.
- Cover the top of the mold using an aluminum foil. Then bring them to steam for 30 to 40 minutes.
- After steaming, let the temperature cool down then refrigerate them
- Serve as a dessert for parties and family dinner. Enjoy!
