Pork Colombo

Colombo is a dish that is prepared in the West Indies Guyana and whose name refers to the Colombo powder that is used in this dish. This powder is a spice blend that was introduced by Indians from India.

There are several types of colombo powder but also several kinds of colombo: fish colombo, vegetarian colombo, chicken colombo, lamb, goat, pork etc...


Ingredients:

  • 4 potatoes medium
  • 1 fat onion
  • 1 fat eggplant
  • 200 g green beans fresh or frozen (optional)
  • 1 lime (the juice)
  • 1 branch thyme
  • 1 Bay leaf
  • 4 soup spoons colombo powder diluted in a little water

Pork marinade

  • 1 lime
  • 3 vegetarian peppers finely chopped 
  • 1.5 kg pork roll cut into pieces
  • 2 pinches clove powder Buy
  • 3 large pods garlic peeled and grated
  • Salt at convenience
  • Hot pepper paste at convenience (optional)


Instructions:

  1. The day before, clean and cut the pork roll into pieces. Extract the juice from the lime and reserve the juice. With the lemon peel, rub the pieces of pork. Rinse with water.
  2. Place the pork pieces in a bowl. Add lime juice, finely chopped vegetarian chili, clove powder, garlic, salt, and hot pepper paste. Mix well and leave to rest in the fridge overnight.
  3. The next day in a casserole, pour a drizzle of oil. Heat over medium heat. Once the oil is hot, pour the pieces of pork with the marinade. 
  4. Sauté 1 to 2 minutes, stirring occasionally. Then cover with plenty of water and boil for about 30 minutes to tenderize the meat.
  5. At the same time, cut the vegetables into medium pieces. Stalk the green beans and pass them through water if they are fresh. Peel and cut the vegetables into pieces: eggplant (do not peel and keep the skin), potatoes, and onion. Reserve the vegetables.
  6. When the water has been absorbed and the meat is tender, add the onion, eggplant, potatoes. Add a little water halfway up, the sprig of thyme, the bay leaf and simmer uncovered for about 30 minutes. Check the cooking from time to time and stir.
  7. Once the vegetables are well cooked, add the colombo powder previously diluted in a little water.
  8. The sauce should be quite thick. To do this, simply mash a few pieces of potatoes to bind the sauce.
  9. Then add the green beans. Let simmer for about 10 to 15 minutes. The vegetables must be well cooked or tender. Turn off the heat, then pour in the juice of a lime. Mix and adjust the seasoning if necessary.
  10. Serve hot with white rice and a little hot pepper for lovers of spicy flavors.
