Gazpacho

Traditional Gazpacho (Spanish)


Gazpacho is a traditional cold soup made with tomatoes and peppers. A great summer favourite, anyone who has eaten it on a hot summer day knows how refreshing it can be. One of the things I love is all the toppings you can add to it. 

Traditional gazpacho is a refreshing soup served cold. This easy recipe is prepared with ripe tomatoes, peppers, cucumbers and onions.


Preparation time: 30 minutes

Total time: 30 minutes

Serves: 8 people


Ingredients:

• 5 very ripe tomatoes about 1 kg

• 4 seedless bell peppers, cleaned inside, cut into chunks

• 1 cucumber peeled and cut into pieces

• ½ small purple onion

• 1 clove of garlic optional

• Salt to your taste

• Olive oil to your taste

• Some tbsp of vinegar to your taste


Instructions:

1. Peel the tomatoes. A simple way to do this is to bring the water to a boil, cut a cross into the base of each tomato, place them in boiling water for 2 minutes. They will start to peel on their own. Remove the tomatoes and run them under cold water, then remove them.

2. Place tomatoes, peppers, cucumber, onion, garlic and salt in a blender. Blend until you get a creamy consistency. Stop before for a gazpacho with a few small pieces.

3. Pour into a large bowl, cover with plastic wrap or a plate and refrigerate for a few hours before serving.

4. Mix olive oil and sherry vinegar or lemon juice before serving, and serve with a garnish of your choice
