 Entrecotê with Herbs


Preparation time: 5 mins.  Resting time: 1 hour  Cooking time: 10 mins.

Ingredients:

  • 1 beef entrecote
  • 5 sprigs of fresh thyme
  • 1 sprig of Rosemary
  • 2 leaves of salvia
  • 2 echalottes
  • 1 clove of garlic
  • olive oil
  •  salt
  • ground pepper


Instructions:

  1. Place the steak on a plate and pour a little olive oil. Strip a few sprigs of thyme and rosemary on both sides of the meat and sprinkle salt and pepper, patting them gently. Add the salvia leaves and the peeled and crushed garlic clove on top. Cover with cling film and let the meat rest for 1 hour at room temperature.
  2. Heat your frying pan, plancha, grill. Place a few sprigs of thyme, salvia, rosemary from the marinade in the frying pan and add the meat and echalotte, taking care not to add the garlic. After 2 to 3 minutes of cooking, turn the meat over without piercing it, add the remaining thyme and garlic to the meat then finish cooking.
  3. At the end of cooking, place the meat on a large sheet of aluminum foil, season with a little fleur de sel and ground pepper and wrap it in the sheet of aluminum foil as tightly as possible. Let the entrecôte thus relax for as long as the cooking time.
  4. I accompanied this delicious grilled steak with buttered small potatoes. Bon appetit!
