 Duck Breast with Honey and Spices


 Prep time: 25 mins  Cooking time: 5 mins.   Cost: expensive  Serving: 4 persons


Ingredients:
  • 2 duck breast
  • 1tsp allspice
  • 3 tbsp honey
  • salt
  • pepper

Procedure:
  1. Score the duck breast on the skin side, so that they lose as much far as during cooking.
  2. Heat a non-stick skillet. Cook the duck breast, skin side down first over high heat taking care not to get rid of the cooking fat, several time if necessary.
  3. after eliminating the cooking fat, turn the duck breast flesh side down then reduce the heat.
  4. Brush the skin of the duck breast with honey and sprinkler with the four-spice mixture, salt and pepper.
  5. Cover the pan and cook for about 5 minutes, the meat must remain rare.
  6. Remove the meat and let it rest for a few minutes on a cutting board. The meat will bleed.
  7. Cut the meat into fairly slices, them put them in a dish. Keep in hot oven around 130°C to finish the cooking.
  8. Meanwhile, deglaze the cooking pan with water, honey and vinegar, or brandy, or even the blood collected on the cutting board.
  9. Add honey, pour-spicemixture and reduce over low heat to obtain a honey sauce. Adjust seasoning.
  10. Serve the duck breasts in the dish or on a plate, with their sauce and your preferred side dish.
