Cassava Cake
Cassava cake is a traditional Filipino moist cake made from grated cassava, coconut milk, and condensed milk with a custard layer on top. It is very popular dish in the Philippines, where it is commonly eaten for merienda or snack. It is also served during gatherings and special occasions.
Ingredients:
- 350g grated cassava
- 20 cl coconut milk
- 40 cl water
- 4tbsp sugar
- 1 can Condensed milk
Procedure:
- Peel the cassava root: remove the brown skin and the pink part under the skin.
- Cut the cassava into sections and then in half lengthwise to more easily remove the central "stem". It is a fiber that is in the middle of the root and is hard, it looks like rope. Then grate the cassava as you would grate carrots, with a manual grater or a food processor fitted with a grater
- Then mix with coconut milk, water, sugar and condensed milk.
- Pour everything into a gratin dish or a cake tin and bake at 200°C for 30 minutes.
- Cover everything with a good layer of sweetened condensed milk and leave to brown for a few minutes.
- Serve warm, then store in the refrigerator. Reheat each time before tasting.
