Carrot and green apple salad with yogurt mayonnaise 


Difficulty: minimal 

Preparation: 20 minutes 

Servings: for 4 people


Ingredients:  

6 medium carrots 

3 green apples 

1 lemon 

1 egg 

2 dl of whole yoghurt 

1 loaf of soy bread 

1 dl of oil extra virgin olive oil 

sale & pepper 


Preparations:

Prepare the yoghurt mayonnaise: combine the egg, the filtered juice of half a lemon, a pinch of salt and a grind of pepper in the blender jug; blend everything, slowly adding the oil poured in slowly. 

Gently incorporate the yoghurt, using the blender at the lowest speed.

Wash and scrape the carrots; peel the apples and remove the core. 

Cut both into julienne strips, transfer them to a bowl and sprinkle them with the filtered juice of the remaining lemon. 

Dress carrots and apples with yogurt mayonnaise. Mix well, distribute the salad in individual bowls and serve with slices of soy bread. 


Notes:

The wine Served with the Val d'Isarco Kerner. This vine of Austrian origin is today at the center of the development of new interesting South Tyrolean wines.
